At the beginning of each year, Uncle Ghaleb tells us many stories about the area and the farm in which coffee trees grow in the high mountains of the Haraz region, at an altitude of 1800-2200 meters above sea level. The farmers in that region share the finest types of coffee with original variety(Tepica), which are descended from the non-genetically modified Arabica strain. What distinguishes the crops of that region is the sweetness of the fruits, coffee and irrigation with rainwater.
We started cooperating with Uncle Ghaleb in the harvest of this year 2020 to collaborate on building a special processing method to highlight the best suggestions for coffee beans. After direct cooperation, Uncle Ghaleb expressed his readiness to launch permanent cooperation and develop treatment method. The treatment relied on tight fermentation under moderate temperatures to ensure an increase in the sugar content of the coffee beans and an increase in the fruitiness of the coffee after roasted.
Gallah, Arabic idiom which refer to the farmer earns best crop from cultivated land. And here what Camel Step define Gallah; " The special coffee beans grow in high level of care and its cherry get a special processed according to Camel Step's standard ".
Gallah is a Camel Step's project start with distinct crops and special treatment to advance the quality of green coffee, where the coffee beans live in the story of "Gallah" the highest levels of care and quality in irrigation, harvesting, processing and storage to be transported and then roasted and finally prepared and enjoyed.
Gallah is implemented with many farmers who have the ability to develop and maintain periodically to provide everything unique to our partners and to add a competitive advantage through which we work to develop the coffee industry market in the region.
